I have a lot of games that I loved the soundtracks from, so I am going to list a mix of composers and specific games, if you mind.
Nobuo Uematsu-Hands down my favorite video game composer of all time. He did beautiful work for Lost Odyssey, Blue Dragon, and every Final Fantasy before XI.
Motoi Sakuraba-Every game this guy touches turns to gold, but not as pure as Uematsu's gold. Tales games regularly feature amazing music from this guy, and I am sure no one would want to refute him.
Final Fantasy Dissidia-Okay, I know this is mainly just a bunch of remixes, but these are remixes done so well, that you would love listening to them over and over again. Even the new songs introduced just for this game are beautifully made.
Frank Klepacki-If you don't know who this guy is, and you consider yourself a PC Gamer, you need to listen more. This guy is the composer for the Red Alert series, and has done an amazing job with the Red Alert 3 soundtrack, maybe too amazing of a job.
Crisis Core: Final Fantasy 7: Another game with mostly remixes and new music. The music from this game is ultimately better than most of the stuff that is in Final Fantasy 7, but it still falls short in some areas.
World of Goo-ooh here is an independent game none of you really expected to have good music. Sure its mostly orchestrated, but for an independent game, this is pretty much high-caliber music.
The Witcher-For a game that starts off boring as sin, the soundtrack is amazingly well-done. It really moves you during emotional moments, and cheers you on during battles.
Advance Wars (franchise)-Okay here is a game that you will never find an OST for, but still has an amazing soundtrack. Each Advance Wars game comes with an amazing soundtrack, especially Dual Strike.
Dawn of War II-Sure this has a limited amount of music, but it is again, all well-done, no thanks needed for Relic.
Homeworld (franchise)-In terms of space RTS music, this is the best of the best. It is beautifully well done with ups and lows for each of the different moments this game offers.
Legend of Zelda (Franchise)-The entire franchise of LOZ has music done so good, you would swear it was the best Nintendo ever came up with.
Metroid (franchise)-Again, another Nintendo franchise that has historically had amazing soundtracks and set-pieces.
Super Mario Galaxy-Okay, while the other Mario games had familiar and memorable music, but none of them can compare and beat Super Mario Galaxy's.
God of War (franchise)-Again, another franchise that has traditionally had amazing music.
All Bioware Games-Okay this may be stretching it, but almost every game Bioware has come up with has had a soundtrack that is nigh impossible to beat.
I could go on and on, but I already might be flamed for how long this post is X_X..but meh, you can just PM me if you want me to tell you the rest.
